Guilt-free Shirataki Sotanghon Soup

Yup. We said it. This Sotanghon Soup is GUILT-FREE.
Hear us out.
The highlight of this hearty recipe is Shirataki Angel Hair. It’s a Keto-approved thin, translucent and gelatinous Japanese noodles made from konjac yam. It’s zero-carb and almost zero-calorie because it’s 97% water and 3% fiber + traces of protein, fat & calcium.
Cool, right? You can now binge on noodles whenever you feel down, lonely or just even hungry.
Apart from the Shirataki noodles, the ingredients are simple, pantry staples that you probably already have on hand. So let’s start cookin’!
Ingredients for Guilt-free Sotanghon Soup
2 tbsps olive oil
8 cloves of garlic, finely chopped
1 small red onion, coarsely chopped
1 tbsp ginger, thinly sliced
1/2 tbsps fish sauce
1 tbsp soy sauce
1 pack of Shirataki Angel Hair
1/2 carrot, thinly sliced
1 tsp lime juice/calamansi
1/4 cabbage
3/4 to 1 cup of water
2 stems of wansuy or cilantro
chopped spring onions for garnish
How to Make:
- Start by getting the pot hot over a medium-high heat. Pour olive oil and sweat onion and carrots until translucent. Add ginger and garlic and sauté until fragrant and soft. Sprinkle half a tablespoon of pepper and pour in your fish sauce. Add soy sauce, stir and let it simmer for a minute. Gently pour in water and bring it to a boil.
- Rinse your Shirataki Angel Hair with running cold water for a minute to remove the initial fishy smell. Dump it in the boiling water. Stir and let it simmer for 4-5 minutes, depending on how chewy you want your noodles to be.
- Add in cabbage and lime juice the last minute.
- Now that your soup is done, serve it in a bowl with a sprinkle of thinly sliced spring onion and wansuy. Enjoy!
Cooks Tips:
Prep all of your ingredients before you fire up your stove (chop garlic & onions, grate and slice carrots, chop spring onion).
Add salt, pepper and chili flakes to taste
If you don’t like the taste or smell of wansuy/cilantro, you can use celery instead
If you want to make this meaty, simply boil chicken breast on a separate pan without overcooking it, shred and add to your Sotangon Soup
